Milk Bar's Apple Pie Cake

As many of you know by now, my love for Milk Bar's collection of cakes runs deep. I've made nearly half a dozen of their cakes, as well as their Crack Pie and Compost Cookies. I've also tasted tested their cake truffles and Cornflake Chocolate Chip Cookie at their store fronts. I'm basically a super fan.

If you've never heard of Milk Bar or never made a Milk Bar cake before, here's what you need to know. First, there are a lot of elements that go into each cake. I certainly don't say that to scare you off. I just want to prepare you. I usually take two to three days to make this cake. I know that sounds like a lot, and you can certainly make this cake in a day if you wanted to. However long you take to make it, just give yourself enough time to let the cake set in the freezer before serving it. These cakes don't cut well at room temperature.

Second, it's absolutely, 100% worth your time to make one of these cakes. Each one is full of flavor and texture, and will be a guaranteed crowd pleaser. Take a look at the picture below: you've got a layer of barely brown butter cake with an apple cider soak, topped with liquid cheesecake, pie crumbs and apple pie filling. All those layers are repeated a second time and then the cake is topped off with a pie crumb frosting. What's a pie crumb frosting, you ask? This frosting is made by blending actual pie crumbs with milk and adding it to your butter and powdered sugar base. This cake literally tastes like apple pie!

Another thing to know about the Milk Bar cakes, you'll need a couple specialized kitchen accessories to perfect the look of this cake. The first is a 6-inch cake ring like THIS ONE. You'll use this to cut out the cake layers. You'll also need acetate strips like THESE to hold the cake together while you're building it and while it sets.

If you're a little nervous about attempting one of these cakes or don't know which one to start with, I'd suggest trying out the classic Birthday Cake. It has the least amount of steps but is one of their best tasting and most popular cakes.

As for this Apple Pie Cake, it's a total winner in my book. It's also my new substitute for pie at Thanksgiving dinner!
